Island Calypso Crab Bisque

An east coast favorite, goes good as an appetizer or main course.

INGREDIENTS

  • 2 Tbsp. Margaritaville Calypso Rub
  • ¾ lb. lump crab meat, canned
  • 4 cups chicken stock
  • ¼ cup flour
  • 1 cup heavy cream
  • 1 cup celery, chopped
  • 1 cup carrot, chopped
  • 1 cup onion, chopped
  • 5 Tbsp. butter

DIRECTIONS

  1. Melt butter in heavy skillet over medium heat. Whisk in flour.
  2. Slowly add chicken stock while stirring.
  3. Add remaining ingredients and simmer for 35-40 minutes.
  4. Serve.
