Island Calypso Crab Bisque
An east coast favorite, goes good as an appetizer or main course.
INGREDIENTS
- 2 Tbsp. Margaritaville Calypso Rub
- ¾ lb. lump crab meat, canned
- 4 cups chicken stock
- ¼ cup flour
- 1 cup heavy cream
- 1 cup celery, chopped
- 1 cup carrot, chopped
- 1 cup onion, chopped
- 5 Tbsp. butter
DIRECTIONS
- Melt butter in heavy skillet over medium heat. Whisk in flour.
- Slowly add chicken stock while stirring.
- Add remaining ingredients and simmer for 35-40 minutes.
- Serve.
