Tropical Grilled Chicken and Mango Salad

Try this refreshing lunch favorite among the island locals.


  • Margaritaville Pineapple Chili-Lime Marinade
  • Margaritaville Lemon Herb Vinaigrette Dressing
  • 1 mango, peeled and cubed
  • 1 avocado, peeled and cubed
  • 1 head Romaine lettuce, chopped or 1 package mixed greens
  • 2 chicken breasts, marinated in Margaritaville Pineapple Chili-Lime Marinade, grilled and cut into strips or chunks.
  • ¼ cup cilantro, chopped
  • 2 Tbs. scallions, chopped
  • 1 jalapeno, diced (optional)

Combine all ingredients in a large bowl and top with dressing. Toss and serve.
