Try this refreshing lunch favorite among the island locals.
- Margaritaville Pineapple Chili-Lime Marinade
- Margaritaville Lemon Herb Vinaigrette Dressing
- 1 mango, peeled and cubed
- 1 avocado, peeled and cubed
- 1 head Romaine lettuce, chopped or 1 package mixed greens
- 2 chicken breasts, marinated in Margaritaville Pineapple Chili-Lime Marinade, grilled and cut into strips or chunks.
- ¼ cup cilantro, chopped
- 2 Tbs. scallions, chopped
- 1 jalapeno, diced (optional)
Combine all ingredients in a large bowl and top with dressing. Toss and serve.
